Cinco De Mayo is Monday, and I have some great recipe ideas for you to make at home. I have a serious love affair with Mexican food, so many of my featured recipes have some sort of fiesta flare! They probably aren’t the most authentic Mexican choices, but they are all homemade, EASY and slightly lower in calories.

*One of my all time favorite easy dinners!

*I know Southwest and Mexican are entirety different, but this includes the perfect Guacamole recipe. The burger is really tasty too!
*Also not authentic, but it gets a lot of those familiar flavors into your meal in a super easy format.
