There is something magical about the summery red bites of watermelon, sweet bursts of blueberry, creamy feta, and fragrant mint that come together like a match in foodie heaven. If you haven't tried the watermelon-feta combo yet or the watermelon-mint combo yet, stop what you are doing right now and try this. It's no short of life-changing and perfect for a hot summer day. I have a huge mint plant that I grow each year, and I love pulling off perfectly green leaves just for this recipe.
My Watermelon Blueberry Salad with feta is a hit anytime I serve it and would be the star of any summer party. It is perfectly festive in red, white, and blue for the 4th of July, Memorial Day, or Labor Day. Heck... It's pretty awesome on a random Tuesday night. Plus, it’s an excuse to eat even more watermelon before it’s gone for the season! Don't mind me if I end up in the corner of the party eating the entire thing.

- Watermelon: You'll need fresh summer seedless watermelon, diced into bite-sized cubes. To find the best watermelon at the grocery store, look for one with a yellow spot, which shows it has had enough time in the field to ripen. Avoid one with a white spot, as it might not be ripe. The watermelon should have a deep hollow sound when you tap it and be healthy for its size.
- Blueberries: Fresh blueberries are in season at the same time as watermelon, making them a great addition to this Watermelon Feta Salad. They also add a beautiful natural blue color.
- Crumbled Feta: Feta cheese is a surprisingly flavorful cheese that goes amazingly well with this. The crumbly texture tastes so good here.
- Mint Leaves: Mint is also a great herb with watermelon. You will need fresh herbs and fresh mint. You can also use basil for a different taste.
- Dressing: You can either leave the salad undressed with just lime juice or use my light honey-lime dressing, included in the recipe below. I make it both ways, depending on my mood! Both are great. Hunter and Jackson prefer the plain version.
How to Cut a Watermelon:
The trickiest part of this recipe is cutting the watermelon. Here's how I do it.
- Make sure you have a sharp knife and a large cutting board.
- Make sure to keep your fingers away from the knife.
- Place the flat side of the watermelon down to keep it from rolling.
- Cut it in half right down the center and then in half again.
- Use your knife to cut the rinds off the sides.
- Slice and dice into cubes.

The original recipe featured an actual dressing! I've since started just using the limes on this salad, and I think it's just as good. However, it is also delicious with the dressing, and you get some extra flavor from the honey.
- 1 lime, juiced (can also use lemon juice)
2 teaspoons extra-virgin olive oil
2 teaspoons honey
¼ teaspoon sea salt and black pepper
Mix in a small bowl with a whisk until combined and toss with the watermelon.

Hi Chris! I'd just cut up the fruit, mix the dressing in a separate sealed container. Then you can just toss it at the last minute and top with the cheese! I'm sure you can mix it before, but I'd be afraid it would get too soggy!
