Hi friends!

Happy almost 4th of July!  I decided to share Wednesday’s post a day early this week with the big holiday coming up tomorrow… especially since I have a recipe that I know will be pretty darn fabulous in your holiday spread.  My Watermelon Feta Blueberry Salad recipe is so perfectly delicious and patriotic.  Doesn’t it just look like a 4th of July picnic in a bowl?   The secret is it’s so good and easy to make that you’ll be whipping it up for all your other summer parties as well.

This recipe is so simple and delicious.  You just put all the fruit in a bowl and top with a very light honey lemon dressing.  Or just drizzle some plain lime on top.  I included directions to do both in the recipe and either way it tastes amazing.

My Watermelon Feta Blueberry Salad recipe is hand down a hit anytime I serve it and would be the star of any summer party.  It is perfectly red, white and blue festive for the 4th of July, Memorial Day or Labor Day.  Heck… it’s pretty awesome on a random Tuesday night.

There is something magical about the summery red bites of watermelon, sweet bursts of blueberry, creamy feta and fragrant mint that come together like a match in foodie heaven.  If you haven’t tried the watermelon-feta combo yet or the watermelon-mint combo yet stop what you are doing right now and try this.  It’s no short of life-changing.

I have a huge mint plant I grow each year and love pulling off perfectly green leaves just for this Watermelon Feta Blueberry Salad recipe.

Ingredients
  • 1/2 seedless watermelon cubed (about 8-10 cups)
  • 1 cup blueberries
  • 1/4 cup crumbled feta
  • 2 tablespoons mint leaves chopped (If you love mint, use more)
  • For the dressing*****
  • 2 limes juiced
Instructions
  1. Combine the fruit, mint, and cheese in a bowl.
  2. Toss in the lime juice or use the dressing found in the notes.
  3. Serve immediately.
Recipe Notes

The original recipe featured an actual dressing! I've since started just using just the limes on this salad and I think it's just as good. However, it also delicious with the dressing and you get some extra flavor from the honey.

Dressing:
1 lime, juiced
2 teaspoons olive oil
2 teaspoons honey
1/4 teaspoon sea salt

    It says to combine ingredients and serve immediately. Do you think this can be made and put together ahead of time, if it sits in the fridge?

      Hi Chris! I’d just cut up the fruit, mix the dressing in a separate sealed container. Then you can just toss it at the last minute and top with the cheese! I’m sure you can mix it before, but I’d be afraid it would get too soggy!
