Hi everyone!

It’s no secret I love a Crock Pot / slow cooker!  I’ve actually published 40+ Crock Pot recipes on Running in a Skirt and made countless others over the years.  Many of the recipes have been Vegetarian Crock Pot Soup recipes!  I know how hard it is to search for the perfect recipe so I decided to put my favorite soups together in one easy to find resource.

I started using my slow cooker when my husband and I got married and I needed to cook a meal that would feed both of us, even though we were not eating at the same time because of my crazy work schedule.  I still use it just as much because I find it so much less stressful to prepare a meal in the morning than at 6’clock in the evening.  Right now I do the prep work for making the slow cooker meal while I’m feeding the babies in the morning and let it sit all day.  It’s MUCH easier than attempting to cook during the witching hour.  I even love the smell of the simmering pot all day.  It just gets you excited about your next meal.  I know the Instant Pot is all the rage now but I still prefer to do my meal prep early in the day and have it cooking instead of working on it in the evening… even if it is faster.

If you are struggling to meal plan, I encourage you to bite the bullet and try it.  A Crock Pot or slow cooker can be a game-changer.  None of these recipes involve a lot of ingredients or a lot of time.  They are easy peasy!  Many of them you just dump all the ingredients in and wait.

Vegetarian Crock Pot Black Bean Soup

This is an oldie but goodie!  You can’t go wrong with this simple black bean soup.  You can leave it with whole beans or puree some or all of it for a smooth soup.  To keep it vegan add avocado on top OR add some cheese if that’s your jam.  Either way, fresh cilantro is a super tasty addition.

This is the soup that started it all!  This was the FIRST recipe I ever published on Running in a Skirt and has been a popular one for years and years.  I originally entered this recipe in a chili cookoff… which I one against meat competitors.  It’s a regular in our family rotation.

This recipe is one of my newer slow cooker soup recipes!  It features lots of vegetable lasagna flavor in the soup and then at the end I add fresh-cooked, broken lasagna noodles and a dollop of perfected spiced ricotta cheese.  It’s unique and totally delicious.

Lentils are such a wonderful protein base for vegetarians so I added them to this delightful soup.  I filled it out with veggies like kale and carrots.  It’s tasty, filling and healthy!

Crock Pot Butternut Squash Soup

This creamy vegetarian Crock Pot Butternut Squash Soup uses greek yogurt instead of heavy cream to get a smooth consistency.  The post includes my tip to cut a butternut squash easily so you can make this soup quickly and effortlessly.  It has a lot of flavor from added apple and carrots!

    How do I just pick one to start with?
    I def need to get my crock pot out more often! My old kitchen was SO small I hated using my crock pot. Now that I have more space I need to get it cooking again!
