It’s no secret I love a Crock Pot / slow cooker! I’ve actually published 40+ Crock Pot recipes on Running in a Skirt and made countless others over the years. Why Crock Pot Vegetarian Soup?
I started using my slow cooker when my husband and I got married and I needed to cook a meal that would feed both of us, even though we were not eating at the same time because of my crazy work schedule. I still use it just as much because I find it so much less stressful to prepare a meal in the morning than at 6’clock in the evening. Right now I do the prep work for making the slow cooker meal while I’m feeding the babies in the morning and let it sit all day. It’s MUCH easier than attempting to cook during the witching hour. I even love the smell of the simmering pot all day. It just gets you excited about your next meal. I know the Instant Pot is all the rage now but I still prefer to do my meal prep early in the day and have it cooking instead of working on it in the evening… even if it is faster.
If you are struggling with a meal plan, I encourage you to bite the bullet and try it. A Crock Pot or slow cooker can be a game-changer. None of these recipes involve a lot of ingredients or a lot of time. They are easy peasy! For many of them, you just dump all the ingredients in and wait.
