Take the guess work out of soup at home with my Easy Crock Pot Black Bean Soup!
Hi guys!
I’m so ready for this upcoming weekend. The past couple weeks have been a whirlwind of ups and downs and I’m looking forward to having a semi-normal weekend at home. We are going out for dinner Friday and then staying in for Valentine’s day.
A good, easy Crock Pot Black Bean Soup recipe has been on my radar to make for quite some time. I’ve been wanting to create one using minimal ingredients that you can keep on hand for dinner in a pinch.
I love the way this one turned out and it is now my new favorite Crock Pot soup.
Once the soup stews all day in the Crock Pot you can eat it as is, or take an immersion blender to it. I choose to blend mine half way. Enough to thicken the broth, but still have plenty of whole beans and peppers. You could also choose to blend it completely. It really just depends on how you like your easy Crock Pot Black Bean Soup.
For toppings you could go with classic sour cream (or plain Greek yogurt) and cheese or keep it light, healthy and vegan with avocado. Either way way I highly recommend the fresh cilantro and lime to freshen it up.
My favorite part about this soup is it gets even better the next day making leftovers a total no-brainer.

I love crock pot meals, and soups all the better because one batch can make up a lot of meals for me! This looks yummy, I have never made it before, but a while back I had some at a friends house and it was delicious!
