Pear & Arugula Salad plus Workout Inspiration

After our weekend food binge in Charleston (read about it here), it’s time for a salad.  Maybe a couple of salads.  I did have an extra serving of hush puppies.  Please don’t judge me, they were taunting me on the plate, begging me to eat them.

Salads can be so much more than iceberg and carrot shavings.  I enjoy combining different ingredients to make them even more desirable to eat.  This is one of my winter favorites.  I love the peppery soft, earthy crunch of Arugula.  Pear, pecan and blue cheese combine to make one decadent – but calorie conscious – salad.  Just go light on the dressing and cheese if you are watching your weight.

The simple ingredients sparkle enough that this is a perfect light weekday dinner or fancy enough to serve as a first course at a dinner party.

The real star of the show though is a very light homemade dressing.  It’s made with ingredients you probably already have around the house, so it’s actually super simple.

Salad Ingredients:

Baby Arugula

Ripe Pear – Chopped

Pecan Pieces

Crumbled Blue Cheese

Dressing Ingredients:

1/4 cup Olive Oil

3 tablespoons Red Wine Vinegar

1 clove chopped garlic

2 teaspoon lemon juice

1 teaspoon sugar

1/2 teaspoon salt

Fresh cracked black pepper to taste

Directions:

1. Put pecan pieces in toaster oven and lightly toast until they are just fragrant (1-2 minutes.)  Remove from toaster and cool.

        Watch the pecans carefully…..

… Or they may end up burnt to a crisp and your house will smell

like burnt nuts for days.  Not that I know about that at all…. sigh.

2. Combine dressing ingredients into a Tupperware container and shake together (not as classy as a whisk, but it works and makes for easy clean up!)

                Shake, rattle and roll!

          Now you can store it as well!

3. Assemble salad ingredients and toss with light dressing.
