I can't go through an entire fall season without sharing a new crock pot with y'all! In fact, there are already close to 20 vegetarian slow cooker soup recipes on Running in a Skirt. I shared a post highlighting them all the other week... here it is if you missed it! Creating and sharing these soup recipes has felt like something I just do. In fact, they have always been some of the most popular on my site.
The first one I posted was my Award Winning Vegetarian Chili. It's a tried and true family favorite that I make pretty regularly this time of year. Since that chili has been so popular, I struggled with making another one. Could it compete?
The answer is YES! This Crock Pot Sweet Potato Black Bean Chili recipe is actually totally different from my first creation... yet just as good!

My Crock Pot Sweet Potato Black Bean Chili recipe is filled with hearty sweet potatoes, black beans and red bell pepper. It not only has lots of color but lots of flavor.
The biggest surprise with this soup is the Mexican/ Southwest inspired flavors. I used traditional chili powder but also a healthy dose of my Mexican/Taco Seasoning Blend. You can use your favorite store-bought OR try my recipe here. I make this and keep it in my pantry all the time.
To stay with the flavor theme I added cilantro and lime on top! The fresh green gives this chili a POP you just can't ignore.
As shown this chili is vegan but you could easily add sour cream/ plain greek yogurt and cheese if you'd like!

Once again, I feel like cooking should be easy with ingredients you can find!
- Sweet Potato
- Canned Black Beans
- Canned Tomato
- Red Bell Pepper
- Onion
- Vegetable Broth
- Chili Powder
- Mexican / Taco Seasoning
Topping could include lime, cilantro, green onion, tortilla chips, sour cream, plain greek yogurt or CHEESE!

Crock Pot Sweet Potato Black Bean Chili recipe
Ingredients
- 2 medium sweet potatoes (approx 6 cups), cubed
- 1 red bell pepper, chopped
- 1 sweet onion, chopped
- 2 teaspoons minced garlic
- 2 15 ounce canned black beans, rinsed and drained
- 1 14.5 ounce canned fire roasted tomato
- 1 tablespoon chili powder
- 1 tablespoon Mexican seasoning blend, see notes
- 4 cups vegetable broth
- salt and pepper
- toppings: cilantro, lime, avocado
Instructions
- Add the ingredients to your crock pot or slow cooker. Cook for 6-8 hours on low or 3-4 hours on high until the potatoes are tender.
