Here's a little confession... we're in the home stretch to Christmas and I haven't bought a single Christmas present yet. I know I have a good excuse with the twins, but I see some online shopping in my future this week. Friends and family... feel free to send me your ideas to help a girl out! Christmas this year is definitely not going to be the spectacle it normally is, but I'm ok with that. How are you doing with your Christmas shopping?
Even though we're not doing a big Christmas, I'm still hoping to make a few festive dishes for the Hubs and me to enjoy at home. Easy Christmas appetizers and truly the way to go and my Pomegranate Crostini recipe is perfectly festive for the occasion.
Easy Christmas Appetizers -Pomegranate Crostini Recipe
Whether you are having a low key Christmas like us or throwing a huge party this year these easy Christmas Appetizers are perfect for your holiday menu. Wouldn't these look gorgeous on a holiday table?
My Pomegranate Crostini recipe uses freshly toasted bread, creamy goat cheese sweetened with honey, perfectly tart pomegranate and salty pistachios.
The result is a plate that literally takes minutes to throw together, but looks straight out of a fancy magazine. That's my kind of cooking, friends!
These flavors in the Pomegranate Crostini recipe all pair so perfectly together and I love how festive it looks with the red and green. The creamy sweetened goat cheese is sheer perfection with the toppings. I'm a firm believer in the power of goat cheese. 🙂
I buy goat cheese already sweetened with honey at ALDI, but if you can't find that just add some honey to regular goat cheese. The trick to spreading it on the bread is allowing it to come to room temperature first.
I know this easy Christmas appetizer would be a hit at everything from a nice date at home to a fancy dinner party at your home. It's also a great recipe to throw together at the last minute if you need a potluck dish without a lot of fuss.

Pomegranate Crostini Recipe
Ingredients
- 36 ¼ inch slices french baguette
- olive oil
- 4 ounces honey flavored goat cheese
- 1 cup pomegranate arils
- ½ cup pistachios, chopped
Instructions
- Preheat the oven to 400 degrees.
- Place the french bread slices on a baking sheet and drizzle with a small amount of olive oil. Place slices in oven and toast until golden. Allow to cool.
- Allow the goat cheese to soften a bit and then spread it evenly across the crostini.
- Carefully top with the pomegranate arils and pistachios.

Is there an alternative you would recommend to goat cheese? Just not a fan of it...

You could do a mixture of feta and cream cheese! Or just plain cream cheese... but I think a little feta would add a lot of flavor. It just needs to be creamy enough to spread.

This is a great combination - nuts and bread is something I love since I was a kid. Was my favourite 'snack' - the addition of goats cheese and pomegranate make this even more desirable. I love all the ingredients in here - perfect!!
