Normally, roasted vegetables are cooked in the oven over high heat, but this version of the recipe quickly cooks them in the air fryer. In fact, this recipe can be ready in half the time! You don't even need to take the time to preheat the oven. They turn out tender inside, with a caramelized, crunchy outside that is just perfect.
These Air Fryer Roasted Vegetables are so healthy, flavorful, and delicious. I made this version with a rainbow combination of broccoli, cauliflower, carrots, purple onion, red pepper, and mushrooms, but you can use and adapt this to the vegetables you have on hand. I used garlic powder and onion powder, but you can also mix up the spices. I've included suggestions below.
The kids even loved the variety of veggies in this and ate their portion easily! Now that's a win.

Tip on Cutting the Veggies: You'll want to take into account how long it takes to cook the vegetables when cutting them. Carrots, onions, and bell peppers take longer to cook and have a longer cook time than broccoli and carrots, so I cut them smaller. The mushrooms are tender veggies and also cook quickly, so I leave them in big pieces. So, harder veggies or firm veggies that take longer to cook should be in small pieces.
