Air Fryer Roasted Vegetables recipe
This Air Fryer Roasted Vegetables recipe is as easy as it gets and as tasty as it gets. If you are looking to cook more veggies this year, this is a perfect way to do it. Normally, roasted vegetables are cooked in the oven at high heat, but this version cooks them quickly in the air fryer. In fact, this recipe can be ready in half the time! You don't even need to preheat the oven. They turn out tender inside, with a caramelized, crunchy outside that is just perfect.
These Air Fryer Roasted Vegetables are so healthy, flavorful, and delicious. I made this version with a rainbow combination of broccoli, cauliflower, carrots, purple onion, red pepper, and mushrooms, but you can use and adapt this to the vegetables you have on hand. I used garlic powder and onion powder, but you can mix up the spices however you like. I've included suggestions below.
The kids even loved the variety of veggies in this and ate their portion easily! Now that's a win.

Ingredients:
Here's an overview of what you'll need to make this Air Fryer Roasted Vegetables recipe, but keep scrolling for the full recipe amounts.
- Broccoli: I like to add broccoli to this mix of Air Fryer Roasted Vegetables to add green.
- Cauliflower: Another delicious, approachable vegetable kids and adults love.
- Carrots: Easy to find and delicious. I use whole carrots and slice them thin.
- Red Onion: I love adding red onion or purple onion for its color and flavor.
- Red Bell Pepper: Red bell pepper adds flavor and color.
- Mushrooms: Our family loves mushrooms, so we add these. You'll need to use larger ones so they don't cook too much in the air fryer.
- Olive Oil Spray: I'm a big fan of using olive oil spray when air-frying and roasting. It evenly distributes olive oil throughout the thick coat, keeping the amount you need to a minimum. You can use something like this or an olive oil sprayer. You could also use avocado oil.
- Garlic Powder & Onion Powder: I like using both of these flavors to enhance the broccolini's flavor. You can also use garlic salt.
- Salt & Black Pepper
Tip on Cutting the Veggies: Consider how long it takes to cook the vegetables when cutting them. Carrots, onions, and bell peppers take longer to cook and have a longer cook time than broccoli and carrots, so I cut them smaller. The mushrooms are tender veggies and also cook quickly, so I leave them in big pieces. So, harder veggies or firm veggies that take longer to cook should be in small pieces.

Instructions:
This is an overview of the instructions for this Air Fryer Roasted Vegetables recipe; the full, detailed, printable recipe is below in the recipe card.
- Preheat the fryer to 350 degrees.
- Rise the veggies, pat them dry. Cut the veggies into pieces as shown below.
- Put the roasted vegetables in a single layer in the air fryer basket. I like to keep mine from overlapping so they get nice and crispy without steaming. You might need to cook it in batches if you have a lot, depending on the size of your air fryer.
- Spray the veggies with olive oil spray and sprinkle with garlic powder, onion powder, salt, and pepper.
- Air fry the vegetables for 11-14 minutes until fork-tender, shaking once halfway through. Cooking time can vary depending on the thickness of your vegetables and the specific air fryer.
- Serve immediately and garnish with fresh parsley.

Variations
I love this Air Fryer Roasted Vegetables recipe as written, but here are some fun variations.
- Add Different Spices: These Air Fryer Roasted Veggies are great as written, but depending on what you are making, you could add your favorite seasonings, including Italian Seasoning, Everything Bagel Seasoning, Cajun Spice Mix, Ranch Seasoning Mix, Taco Spice Mix, and Blackening Seasoning.
- Mix up the Veggies: You can customize this with whatever veggies you have, including zucchini, asparagus, beets, Brussels sprouts, yellow squash, or green beans. I would cook any type of super hard or firm vegetables, like potatoes, parsnips, root vegetables, winter squash, or sweet potatoes, separately.
- Make it Asian: Toss it in sesame oil and soy sauce instead of olive oil and top it with sesame seeds.
- Add a Pesto: Finish the dish by adding one of my 10 Homemade Pesto Recipes.
- Balsamic Glazed: Finish with a drizzle of balsamic glaze or balsamic vinegar.
- Add Parmesan Cheese: For even more flavor, add Parmesan cheese.
