Hi guys!

It’s officially summer now. 🙂  The season is a magical time in my mind.  From the long warm evenings, fireflys and fresh plump berries… the season holds a special place in my heart.

One of my favorite things to do in the summer is head up the Blue Ridge Parkway to Graveyard fields and blueberry pick.  Wild blueberry season is later in August and it’s literally a wild experience.  You’ve never seen so many berries in your life and so many people are up there with gallon jugs.  There are hiking trails through the winds and some even lead to cool and brisk waterfalls.  The berries are little but bursting with sweet intense flavor.

You just have to watch out for snakes and bears! haha!

Anyways, if you are ever in the Asheville mountains around mid-late August I recommend it, wild animals aside.  I also recommend my Blueberry Pie Overnight Oats!

No, no it’s not EXACTLY like pie but it sure makes one delicious, healthy breakfast.

And you really can’t go wrong with plump blueberries… even if they are just the type bought at the store.

For the Blueberry Pie Overnight Oats I kept the actual oatmeal pretty simple.  The flavor comes from a small container of your favorite blueberry greek yogurt.  You layer it in the middle and add some sweet berries.

The top is another dollop of that yogurt and a sprinkle of granola for a crunch.

You can go to the trouble to serve it piled high in a mason jar, or just put it all in a bowl.  I promise it tastes the same either way.

This is exactly how I’ll be eating my blueberries all summer.  Enjoy!

These look delicious! I’m obsessed with overnight oats lately so I’ll add this to my rotation!

Blueberry picking sounds fun. Are there really snakes in there?

    • JulieWunder June 25, 2016 at 11:40 am - Reply

I know people that have seen both bears and snakes up there… but I haven’t yet. Thank goodness. I might have a different opinion of it if that happens. haha!

I think one of the first things I’m gonna do when I get to my new space (after I unpack everything) = make a whole ton of mason jar salads + oats!! <3 This looks awesome!

Blueberries are sooooo good for you! If I could make this the night before and eat it on my way into work, I’d be set!

Blueberries last about 5 seconds in our house. I do want to buy them again though so I can see if Annabelle likes them! She will probably love them. She basically loves all food, ha!

Hi Heather! I know! They go so fast. Rasberries are another one that I can’t keep around.

Overnight oats is one of the best ways to have your oatmeal and stay cool too. Ooohhh and wild blueberry picking? That sounds like a dream. You don’t really get that kind of berry picking in Colorado, but I can LOVE it vicariously through your blog.

Perfect for summer, huh! I’ll have to post about it this year!

Julie, I share the same affinity for all things summer and blueberry picking! I’ve never experienced the wild blueberry picking you mentioned with snakes and bears but like they say…no risk no reward and what doesn’t kill you makes you stronger. LOL I love (and pinned) this berry filled breakfast option and I’m looking forward to your favorite new protein option for post-workout recovery.

Hi Holly! I wrote that but I’ve never seen a bear or snake out there. I might feel differently when I do– haha! So glad you liked the recipe.

Yay for summer and more importantly, yay for blueberries. I eat them like the world is going to run out. They are like candy to me and this looks like a delicious way to use them.

I basically can’t keep blueberries around me because I pop them like skittles. Which is better than actually popping skittles, I guess. But still!

    • JulieWunder June 25, 2016 at 11:27 am - Reply

Exactly. 🙂 Nothing wrong with a little blueberry poppin’!
