• Strawberry Cake Mix: You will need this gorgeous pink strawberry cake mix for this recipe.  Look for the 15.25 box of cake mix to get the right proportions for the cookies to bake properly. I tested with Duncan Hines and Pillsbury.
• Eggs:  I use large eggs in my baking.  To make sure you don't get any shell bits in your cookies, break them into a small bowl first. Use room temperature eggs for the best baking results.
• Oil: I used vegetable oil in testing this recipe, but you can substitute it with olive oil or melted coconut oil if you prefer.  If you are feeling extra indulgent, you can use slightly cooled, melted butter.  You just need some sort of oil.
• White Chocolate Chips: I love how white chocolate pairs with strawberry, but feel free to use plain chocolate, semi-sweet chocolate chips, dark chocolate chips, or leave them out.

Step One: Prepare the Dough

1. Preheat the oven to 350 degrees and spray your cookie sheet or baking sheet with cooking spray.  For easy cleanup, you can also use a lined baking sheet with parchment paper or a silicone mat.
2. You can make these in just one bowl! In a large mixing bowl, whisk together the egg and oil until combined.  You can use a hand mixer on a low speed or just mix by hand with a spatula.
3. Add the box of strawberry cake mix and stir until combined to make your cookie dough batter.  Fold in the white chocolate chips as the soft dough forms.
4. If the dough feels too sticky to work with, chill it in the fridge for about 30 minutes.

Step Two: Bake the Strawberry Cake Mix Cookies

1. Using a cookie scoop or ice cream scoop, spoon the 1-inch strawberry cookie dough ball into balls.  Roll the dough into balls and place 2 inches apart on the cookie sheets. For extra-pretty cookies, add a few extra white chocolate chips on top of the balls.  Use a large baking sheet, but you might still need to work in batches of cookies.
2. Bake for 9-11 minutes.  The center will still be soft, and you will want to get them out before they turn golden brown.
3. Allow the cookies to cool for a second and transfer them to a cooling wire rack.
4. Once cooked, put them in an airtight container for storage.

Baking Tips:

• Use a cookie scoop for easy preparation and uniform-sized cookies.
• Use baking sheets that aren't warm or hot.  Otherwise, the cookies can spread too much before baking.
• If the dough is sticky and hard to work with, refrigerate it for 30 minutes.  Chilled dough should be easier to work with, and you should then be able to scoop it out.
• Put the dough in the fridge between batches of baking, so it doesn't get too warm.
• Don't overbake the cookies.  They will not brown.  You want them to still have a soft texture.
