Did you know that pistachios are one of the big food trends of 2015?  Crazy huh?  Those little green nuts are finally coming in handy.

Not only are they a big food trend, they are the star of this tasty Pistachio Hummus.

Pistachio Hummus is a healthy and delicious dip or sandwich spread!

Ingredients
  • 1 15 ounce can chickpeas rinsed and drained
  • 2 tablespoons olive oil
  • 1/2 cup shelled pistachios
  • 1/3 cup water or tahini
  • 1 teaspoon minced garlic
  • 1 lemon juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoon fresh basil leaves
Instructions
  1. Mix all ingredients in a food processor.
  2. If you are using a smaller chopper, start with the chick peas and oil. Next add the water/ tahini and pistachios. Finish with the garlic, lemon, salt, pepper and basil.
  3. Serve with fresh vegetables or pita. Also works as a sandwich spread.
Recipe Notes

If you can't find tahini, water will also work! You will just miss that sesame paste flavor!

    I love pistachios, definitely going to try this. I like to just eat them out of the jar, but I’ve also made a similar fish recipe except I used cod, and OMG is it good!

    I only recently (like in the past year) discovered how wonderful pistachios are! Pistachio hummus sounds just plain ‘ol amazing! Now, to find some pistachios…

    Looks fabulous! I love Pistachio’s, but for some reason have only ever eaten them around Christmas time:) I think that is because usually at least one or two neighbors brings them with their neighbor gifts:) I will have to hang on to this to try, this sound great!!!

    I feel like I’m the only person in the world who doesn’t eat pistachios, or many other nuts for that matter. When they started becoming sort of a “craze,” I couldn’t really understand why. But everyone seems to like them a lot, so I imagine they are loving this recipe!!!

    Julie, you are so creative! Pistachios in hummus?!? I love it! I really like pistachios, but almost never buy them (because I’m lazy and don’t want to shell them).
    I think my favorite nut is the hazelnut, but they are crazy expensive!

      They have them at Trader Joes– just the “nut meat.” Shelling them takes way too long! 🙂
