Did everyone have a wonderful Memorial Day Weekend?  I spent mine in Pittsburgh celebrating the hub’s sister’s wedding.  It was such a lovely event.  I’ll be sharing some highlights and photos tomorrow.  Keep reading for a fabulous giveaway!

Well, one of the new recipes I made for the party turned out so well I just had to share it with you guys.  Turn your attention front and center to that lovely Grilled Sweet Potato Salad!

My Grilled Sweet Potato & Black Bean Salad recipe is a unique combination of flavors that is sure to impress at your next party. I got everything for this Grilled Sweet Potato Salad (and the entire party!) at ALDI.

The Best Vegetarian Cookout Menu / Running in a Skirt

Why have I been all about ALDI?  Because they have quality food for a fraction of the price of other stores.  It’s a no brainer.  Shopping there is fast, easy and convenient, too!

For this recipe the SimplyNature Organic Black Beans, sweet potatoes and red peppers play off each other perfectly.  When I’m at ALDI I always watch for their own special brands like SimplyNature because I know it will be free of artificial colors, flavors and unnecessary enhancers.  I’m also so impressed by the selection of produce they carry.  There are always great organic produce options, as well.

To make this Grilled Sweet Potato Salad, you start by grilling big sweet potato slices and red pepper.

You want the sweet potatoes to cook until tender.

The red peppers just need a nice char.  It’s better if they are still a little crunchy.

6 Ingredient Grilled Sweet Potato Salad/ Running in a Skirt

After grilling, chop the sweet potatoes and red peppers into bite sized chunks and toss the veggies with other yummy-ness like black beans, green onions, lime and cilantro.  This delightful vegetarian grilling recipe is only 6 ingredients, so it’s perfect if you are in a hurry.  It’s vegan, too!

6 Ingredient Grilled Sweet Potato Salad/ Running in a Skirt

My Grilled Sweet Potato Salad recipe tastes great, but it’s also a healthy choice because of the added SimplyNature Organic Black Beans for protein.  The colorful sweet potatoes and other veggies are filling and packed with vitamins.

You could easily make this as a side dish like I did or even a vegetarian or vegan main course during the week.  It’s that filling and delicious!

Serve warm or store in the fridge and eat cold.  Either way my Grilled Sweet Potato Salad is one you will want to make again and again!

6 Ingredient Grilled Sweet Potato Salad/ Running in a Skirt

Grilled Sweet Potato & Black Bean Salad

A tasty, fresh and easy vegetarian grilling dish!
Prep Time 15 mins
Cook Time 20 mins
Total Time 35 mins
Course Salad, Side Dish, Vegetarian
Cuisine American


  • 3 sweet potatoes, peeled and sliced
  • 1 red pepper, cut into large flat pieces for grilling
  • 2 teaspoons SimplyNature Organic Extra Virgin Olive Oil, divided
  • 1 can SimplyNature Organic Black Beans, rinsed and drained
  • 2 green onions, chopped
  • 1/2 cup cilantro, chopped
  • 2 limes, juiced
  • Stonemill salt and pepper to taste


  • Preheat the grill to medium heat.
  • In a large bowl toss the sweet potatoes in half of the olive oil. Toss the red peppers with the rest of the olive oil in a separate bowl. Sprinkle both with salt and pepper.
  • Place the sweet potatoes on the grill. Cook until tender, about 8-10 minutes on each side. With a few minutes remaining in the grilling, add the peppers. Cook them for 2 minutes on each side until slightly charred.
  • When cool enough to touch, cut the sweet potatoes and red peppers into bite-sized pieces.
  • Stir in the black beans, green onions, cilantro and lime juice. Salt and pepper to taste.
  • Serve warm or cold!


You could also add avocado in at the end!

      I forgot about Aldi’s. I got so wrapped up in this recipe! LOL. I love shopping at Aldi. I am in a motorized chair and I Love how wide the aisles are. It’s very easy to get around and the items tend to be lower and easier to reach as well.

    I honestly don’t know what I would do without the Aldi’s in my town. It always killed me going to the grocery store and spending hundreds on groceries – even double if buying organic. I finally gave Aldi’s a chance several years ago and haven’t looked back. I love everything about the store – the people, prices, fresh produce, wine, dairy…and let’s not forget the aisle of random stuff that seems to have all kinds of fun seasonal buys! The first time I checked out, I thought my total was wrong and people laughed and said – “great food, great prices”. I won’t even get started on how much you can save if shopping for a big party or brunch. Thank you Aldi’s for making high quality food affordable for my family – I’ll be a loyal customer for life!

    I first fell in love with Aldi while vacationing in Florida two summers ago. I almost had a heartache when I found out a Aldi was coming to my area in Virginia 6 months ago. Since my Aldi opened, I feel like I’m in they almost every other day! Lol. I love their wide selection of products and affordable prices. Not to mention the taste and quality of Aldi products are superb! As a mother of 5, being frugal is an understatement. I can proudly say I can grocery shop at Aldi without ever going over my budget. I love Aldi!

    OMG! When I found out Aldi was opening in my area, I became overly excited! I had shopped there for years when I lived in the upstate and for 10 years living in the lowcountry and not having an Aldi was a bummer. Aldi has everything you can imagine at such reasonable prices. I love preparing for parties by shopping there. I love the fact that I can get gourmet cheese for a fraction of the price of over stores (Harris Teeter, Publix)…yes I went there. I can find just the right thing for any occasion and the random weekly sale items are a plus! Sometimes, they will have something for sale that you may have thought about and bam…there it is. Like, this past week, the summer fun items were for sale and for such a great price. No need to head to Walmart or Target. Aldi is a must for every city and I’m so glad it is now 5 minutes away from me so I can stop in anytime! 🙂

    About a year ago I was in the check out line at Aldi and there was a really handsome guy in front of me. As I was unloading my groceries, I would keep glancing over at him. As I was putting my eggs up on the belt, he finally made eye contact with me and I got instantly nervous that I missed the belt and the eggs dropped and went all over the place!! The guy started laughing and told the cashier that I must be having a rough day and he ended up buying all of my groceries!!! We ended up exchanging numbers and went out for a date and have been together ever since!

    That salad looks amazing! My own Aldi story is pretty simple; my Grandpa was very smart and frugal and always shopped there when we would visit him in NY. I didn’t understand what all the buzz was about until I became an adult, and we didn’t have any Aldi in VA. I kept hearing about their awesome products and prices, but was sad they weren’t in my state. Fast-forward to the past two years and we have several Aldi stores in my area! Yay! Every time I shop at Aldi I think of my late Grandpa, and I am so pleased with all of their brands, and the care they take to provide the best prices and best ingredients to customers.

    I don’t have a lot of experience with ALDI but one of my favorite things is the way they give you a quarter for returning your cart after you’re done with it. Do they still do that? I thought that was the coolest thing as a kid!

    Aldi really stretches my grocery dollar. I but most of my seasonings there, and also canned goods, bread, produce, cheese and dairy. Their prices are better than Walmart and FAR better than my local grocery store. I’ve founds some good wines there also, and some great seasonal buys too.

    I was just thinking about sweet potatoes. They had a sweet potato salad side dish at the Jupiter Beach resort I just visited and it was delicious! Yours has a little different twist to it but still looks great! Pinning for sure!

    Ever since my first trip to Germany, I fell in love with aldi! I’m so happy they have healthier products that I know I can feel good about. There’s an aldi just a mile from my office, so it’s incredibly easy for me to make shopping quick and healthy!

    Love Aldi! I do most of my grocery shopping there. Not only do they have the freshest fruits and vegetables but their meats are a good quality. They also have a double your money back grantee, if you don’t like something contact the store and they will refund your money.

    Yum! Grilled sweet potatoes! We have an Aldi’s here in town I enjoy shopping there. They have saved me plenty of money over the years. I love they’re fresh and reasonably price produce.

    The recipe looks delicious! My family and I love Aldi. We are on a limited budget since I am a stay at home mom. I love getting all the basic staples there but I also love all the healthy options for my son’s lunches that I pack him. Also I am just amazed at the fresh produce prices. Its a blessing to be able to eat healthy AND stick to my budget.

    I think I told you I have been an Aldi’s fan since way back—when our boys were little and we lived in Greenville, Ohio in 1987-1991 we drove to Richmond, IN once a month to stock up at Aldi’s. We were on a pretty slim budget and it was always our go to store for inexpensive good options. I love how they have evolved over the years and now have so many great items to offer. The produce is always my best deal there—not only do I save money I have really good options for healthy eating. It is easy to shop there and the employees are ALWAYS nice–no matter what store I am in and I have been in many overt the years.

    A good friend told me about Aldi’s, she said her grocery bill was about half of what it used to be before shopping there. She went on to tell me some of her favorite things and after that, I went to check it out. For sure their produce is great, prices are really great. I have not tried anything from there I did not like. My husband really enjoys their pistachio nuts, so good and nobody has them for a lower cost.

    Once we get this move over with and get settled I am looking forward to really trying Aldi’s. I love making soups and I bet they have a lot of ingredients for that.

    Your recipe looks delicious Julie. I bet grilled eggplant instead of sweet potatoes would also be good.

    My wife and I love Aldi, we were so excited when they moved to our town. The prices and quality of their products are excellent, its the only place we buy staples like milk, eggs and bread (which I think is the best around). Its funny how we are just going to run in to pick up a few things and end up with a basket full!
