Roasted Broccoli and Potatoes recipe

Roasted Potatoes and Broccoli are the perfect easy weekday side dish made with just five ingredients - potatoes, broccoli, Italian Seasoning, garlic powder, and parmesan cheese - on one sheet pan.  This versatile and healthy roasted vegetable recipe is not only delicious but also vegetarian, gluten-free, and nut-free and can easily be made vegan and dairy-free.

  • Preheat the 425 degrees and spray a baking sheet with cooking spray.
  • In a medium bowl, mix together half of the olive oil, half of the garlic salt, half of the Italian Seasoning, and the baby potatoes. Salt and pepper to taste.
  • Spread the potatoes out evenly on the baking sheet.
  • Roast the potatoes by themselves for 20 minutes.
  • While the potatoes are roasting toss the broccoli, the rest of the olive oil, the rest of the garlic salt, and the rest of the Italian Seasoning. Salt and pepper to taste.
  • Remove the potatoes from the oven and on the same sheet pan, add the broccoli, keeping the vegetables evenly spaced.
  • Roast for another 15-20 minutes until both the potatoes and broccoli are tender.
  • Before serving sprinkle with parmesan cheese.

Notes

Store any leftovers in an airtight container in the fridge for up to 5 days.
Other options for spices include Mexican Spice Mix, Cajun Spice Blend, Herbs de Provence, Ranch Seasoning, or Everything Bagel Seasoning.
