Strawberry and Mango Smoothie

Get ready for a taste of summer with my healthy Strawberry and Mango Smoothie recipe!

Healthy Strawberry and Mango Smoothie Recipe - healthy and vegan/ Running in a Skirt

Hi friends!

Summer is just around the corner and I can’t wait.  Can you believe Memorial Day is THIS weekend?   I’ll be on my deck soaking in the sun (Well, the shade.  I don’t tan!  Who am I kidding?) eating fresh fruits and vegetables and enjoying the season.

And while smoothies are my jam year-round, there is something that just screams summer about this one!  My healthy Strawberry and Mango Smoothie recipe is one of my personal favorites.

Yes, you could just throw it in a blender and mix it all together, but aren’t the layers fun?

The strawberry part has a touch of green spinach, which alters the color slightly but not the taste.

I left the mango side greens free so that vibrant yellow would shine.

The secret to get the layers is to make and pour the strawberry layer first.  While you’re blending the mango, pop it in the freezer.  Just keep it in there long enough to create the second layer.  That should give you just enough firmness to get clean layers.

This healthy meal may look like an indulgent tropical drink, but it is actually a totally healthy way to start off the day.

The sweet, tropical mango pairs perfectly with the ripe red berries.  It’s a match made in smoothie heaven.

  • Strawberry Layer:
  • 1/2 small frozen banana
  • 1/2 cup frozen strawberry
  • 1 small handful baby spinach
  • 1/2 cup almond milk
  • Mango Layer:
  • 1/2 small frozen bananna
  • 1/2 cup frozen mango
  • 1/2 cup almond milk
Instructions
  1. Blend the strawberry layer in a blender and pour in cup. Put in freezer while you work on the other half.
  2. Blend the mango layer and carefully pour on top of the strawberry layer.
Recipe Notes

If you don't want the layers, you can mix all ingredients together and blend at one time. It tastes the same either way!

Like it? I’d love it if you could pin to your favorite smoothie board!

I don’t’ care for strawberry banana flavors, but strawberry mango is a go! We had mango salsa from WFM on Sunday and ate the entire container in one go. yuuuum
