Sheet Pan Gnocchi recipe and Rainbow Veggies

This is the perfect easy vegetarian dinner made on one pan! My Sheet Pan Gnocchi features rainbow veggies and Italian spices.

  • Preheat the oven to 450 degrees and line a baking sheet with foil.
  • In a bowl, toss everything but the parmesan cheese together. Pour onto the baking sheet.
  • Bake for 18-20 minutes or until the vegetables are tender.
  • Serve with a hearty sprinkle of grated parmesan cheese!

Notes

Cut the vegetables in the same size so they will cook evenly!
To make vegan, omit the cheese at the end.
