Sheet Pan Vegetarian Fajitas

Sheet Pan Vegetarian Fajitas are an oven-baked, healthy version of the classic Mexican restaurant favorite.  Made with bell peppers, onion, zucchini, and portobello mushrooms these fajitas are loaded with fresh veggies and a Homemade Taco Seasoning.  This 20-minute meal is super easy to make and the perfect weekday meal.  Adjust your toppings to make these also vegan, gluten-free, dairy-free, or low carb.

For the Fajita Veggies:

For the Fajitas:

  • 4 Tortillas
  • Fajitas toppings: cheese, sour cream or greek yogurt, lime, salsa, cilantro or guacamole.

Instructions
 

  • Preheat the oven to 425 degrees and line a baking sheet with foil.
  • Spray the pan with cooking spray.
  • Toss the bell peppers, onion, zucchini and mushrooms with the Homemade Taco Seasoning Mix and just enough olive oil to coat them.
  • Spread veggie mixture across the pan.
  • Bake for about 20 minutes or until the vegetables are tender.
  • Serve with tortillas and toppings.

Notes

Store any leftovers in an airtight container in the fridge for 3-5 days.
Serve them with my Homemade Salsa and Fresh Guacamole.
