Healthy Greek Yogurt Pumpkin Bread with Chocolate Chips

This Healthy Greek Yogurt Pumpkin Bread with chocolate chips is rich and delicious despite being a bit better for you. It's made with healthy ingredients including white wheat flour, Greek yogurt, coconut oil, pumpkin and homemade pumpkin pie spice. It smells divine coming out of the oven and is the perfect fall treat for breakfast or a snack.
Preheat the oven to 350 degrees and spray your loaf pan with cooking spray.
Microwave your coconut oil for about 20 seconds. Just enough for it to start to turn into a liquid. Allow it to cool a bit.
In a mixing bowl, mix together the dry ingredients - white wheat flour, coconut sugar, pumpkin pie spice, cinnamon, salt, and baking soda. Use a whisk to combine them well.
In a second bowl, mix together the wet ingredients - pumpkin puree, vanilla greek yogurt, milk, egg, vanilla extract, and melted coconut oil.P
Pour the wet ingredients into the dry ingredient and fold together until it's all combined. Do not overwork or overmix it because that will keep it from being fluffy.
Fold in the chocolate chips.The batter will be thick. Put it into a loaf pan. Sprinkle extra chocolate chips on top.
Bake for 40-55 minutes or until a toothpick comes out clean.
Notes
To store the Healthy Pumpkin Bread wrap it in plastic wrap and then put it in a sealed bag or container. Keep it in the fridge for up to a week.To freeze this bread wrap it in foil and put it in a freezer bag. It can stay frozen for up to three months.
