Peel and wash the carrots. Cut them into 1-inch pieces in a diagonal.
Spray the air fryer with non-stick cooking spray or olive oil spray.
Arrange the carrots in a single layer in the air fryer. Spray them with olive oil and sprinkle with the Herbs de Provence, salt and pepper.
Air fry at 400 degrees for 12-15 minutes until they are fork tender.
Garnish with chopped parsley and serve.
Storage & Leftovers
Store any leftover air fryer carrots in an airtight container in the fridge for up to 5 days. Reheat them in the air fryer at 300 until warm.
