My Caprese Grilled Peach Saladrecipe is the best of summer on a plate. Tree-ripened grilled peaches, creamy mozzarella, pine nuts, arugula and a homemade basil vinaigrette make this summer grilled salad shine. This all comes together in less than 20 minutes!
Lightly brush the peaches with the olive oil. Place the peaches on the grill and don't move them. Allow them to cook for 3 to 4 minutes or until grill marks form and the peaches start to caramelize. Repeat on the other side.
How to Assemble the Salad:
While the peaches are grilling, toss the arugula in the basil vinaigrette.
Put the greens in a bed on your serving plate.
Top with the grilled peaches, sliced mozzarella and pine nuts. Drizzle with balsamic glaze.
Serve immediately.
