Grilled Peach Salad recipe

My Caprese Grilled Peach Salad recipe is the best of summer on a plate.  Tree-ripened grilled peaches, creamy mozzarella, pine nuts, arugula and a homemade basil vinaigrette make this summer grilled salad shine.  This all comes together in less than 20 minutes!

Ingredients
  

  • 2 firm, but ripe peaches, cut in wedges
  • 1 teaspoon olive oil
  • 2 cups arugula
  • 1 -2 homemade basil vinaigrette **
  • 1 tablespoon pine nuts, toasted
  • 1 ball fresh mozzarella, cut in wedges **
  • 1-2 tablespoons balsamic glaze
  • garnish: fresh basil leaves

Instructions
 

How to Grill Peaches for Salad:

  • Heat the grill to medium-high.
  • Lightly brush the peaches with the olive oil. Place the peaches on the grill and don't move them. Allow them to cook for 3 to 4 minutes or until grill marks form and the peaches start to caramelize. Repeat on the other side.

How to Assemble the Salad:

  • While the peaches are grilling, toss the arugula in the basil vinaigrette.
  • Put the greens in a bed on your serving plate.
  • Top with the grilled peaches, sliced mozzarella and pine nuts. Drizzle with balsamic glaze.
  • Serve immediately.

Notes

** Homemade Basil Vinaigrette Recipe HERE!
* If you don't have the time to make the basil dressing you can also toss the arugula in olive oil and salt. The basil dressing is a great addition though!
* This recipe would also be dreamy with burrata.
This Grilled Peach Salad is best eaten immediately.  Leftovers will not store well.
