Ingredients
  

  • 4 large apples, cubed
  • ¼ cup apple juice
  • ¼-1/2 cup coconut sugar *
  • 1 tablespoon cinnamon
  • 2 15 ounce cans pumpkin puree
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon vanilla

Instructions
 

  • In a large crock pot add the apples, apple juice, coconut sugar, and cinnamon.  Cook on high for 4 hours or low for 8.  Puree the mixture with an immersion blender when everything is soft.
  • Add the pumpkin, pumpkin pie spice and vanilla to the apples.  Cook on low for another 2-4 hours.  Makes about 5 cups.

Notes

* Adjust the coconut sugar to how sweet you want the apple butter!
