Kale and Wheat Berry Salad
Hearty and healthy, my Kale and Wheat Berry Salad recipe will quickly become one of your favorites.
- 1 cup cooked and cooled wheat berries
- 4 cups curly kale, thinly sliced
- ¼ red onion, thinly sliced
- ½ cup cranberries
- 1 lemon, juiced
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
Whisk the dressing together.
Massage it into the kale.
Toss with the wheat berries, onion and cranberries.
