Ingredients
  

  • 1 cup cooked and cooled wheat berries
  • 4 cups curly kale, thinly sliced
  • ¼ red onion, thinly sliced
  • ½ cup cranberries
  • Dressing:
  • 1 lemon, juiced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • teaspoon salt
  • teaspoon pepper

Instructions
 

  • Whisk the dressing together.
  • Massage it into the kale.
  • Toss with the wheat berries, onion and cranberries.
