Greenest Green Salad

My best green salad features sweet asparagus, crispy celery, mild green onion, protein packed edamame and salty pistachios. I finish it off with a homemade Green Goddess dressing that will have you wishing the salad bowl never ends.

Ingredients
  

  • 8 cups baby spinach
  • 1 cup asparagus, blanched and cut in 1 inch pieces
  • ½ cup green onion, sliced
  • 1 cups edamane, shelled and cooked
  • ½ cup pistachios, shelled
  • 2 tablespoons feta cheese, reduced fat
  • 1 recipe homemade Green Goddess Dressing ***

Instructions
 

  • Pile spinach on the bottom of bowl.
  • Line up the rest of the ingredients.
  • Sprinkle with feta cheese and serve with the homemade Green Goddess dressing.

Notes

To blanch asparagus, put spears in boiling water for one minute. Immediately transfer to a ice bath to stop cooking. Shelled edamame can be found in the frozen section of the grocery store and cooked in the microwave.
