Add the rest of the ingredients, except for the chocolate chips, and mix until smooth.
Remove the mixture from the food processor and fold in the chocolate chip.
Form 10-12 energy balls with your hands. Roll each ball in the extra coconut to form a crust. Place on a lined cookie sheet and put in the fridge. The balls will harden and become less sticky in the fridge. Store in an airtight container in the fridge.
