Healthy Pumpkin Pie Chocolate Chip Energy Bites

Healthy, naturally sweet bites that taste pumpkin pie! Just for fun add chocolate chips and a coconut crust.

Ingredients
  

  • 1 cup dates
  • ½ cup pecans
  • cup pumpkin puree, not pumpkin pie mix
  • ¼ cup unsweetened flake coconut, plus extra to roll the balls in
  • 2 teaspoons vanilla
  • ¾ teaspoon pumpkin pie spice
  • pinch of salt
  • 1 teaspoon mini dark chocolate chips

Instructions
 

  • Soak dates in water for 15-30 minutes. Drain.
  • Using a food processor chop up the dates.
  • Add the rest of the ingredients, except for the chocolate chips, and mix until smooth.
  • Remove the mixture from the food processor and fold in the chocolate chip.
  • Form 10-12 energy balls with your hands. Roll each ball in the extra coconut to form a crust. Place on a lined cookie sheet and put in the fridge. The balls will harden and become less sticky in the fridge. Store in an airtight container in the fridge.
