  • 3 cups old-fashioned oatmeal
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 eggs, beaten
  • 2 cups vanilla almond milk, Can sub any type of milk
  • ½ cup apple sauce
  • 1 teaspoon vanilla extract
  • 1 medium apple, chopped


  • Preheat oven to 350 and grease an 8x8 inch baking pan.
  • Combine the oatmeal, brown sugar, baking powder, cinnamon, nutmeg and salt in one bowl.
  • Mix the eggs, milk, apple sauce and vanilla extract in a second bowl.
  • Slowly pour the wet ingredients over the dry ingredients.
  • Allow mixture to sit for 5 minutes.
  • Fold in the apples.
  • Pour in the casserole dish.
  • Bake for 25-30 minutes.


Serving options: Eat by itself, top with additional fruit and nuts, top with additional milk.
