- 1 15.25 ounce box lemon cake mix
- 2 large eggs
- ½ cup vegetable oil
- optional: powdered sugar
Preheat the oven to 350 degrees. Spray your cookie sheets with cooking spray. You can also line the baking sheet with parchment paper.
In a large bowl, whisk the eggs and then add the oil until combined.
Add the cake mix and stir until combined.
Using a mini ice cream scoop or a tablespoon, put about 1 tablespoon of cookie dough in a ball. Roll that ball into powered sugar.
Bake for 9-11 minutes until cooked in the middle. Transfer to a cooling rack and allow to cool for a few minutes before eating.
