Preheat the oven to 325 degrees.
In a medium bowl, crack the 10 eggs. Whisk in the cottage cheese, salt and pepper.
Spray a 12-cup muffin tin with cooking spray.
Carefully divide the shredded cheese evenly in the 12 muffin tins.
Pour the egg mixture evenly into the muffin cups.
Put egg bites into the oven and bake for 22-25 minutes, or until they are cooked through. You can check doneness with a toothpick, similar to baking a cake.
Remove the egg bites from the tin to cool.
Serve and enjoy!
