Warm a medium non-stick skillet to low heat. Add cooking spray.
Whisk together the eggs, cottage cheese, and salt and pepper.
Pour the egg mixture into the pan. Carefully pull the omelets cooked part to the center, until enough of the egg has cooked to form the omelet.
Carefully flip the omelet and cook on the other side.
Add the shredded cheese to the center and flip the cooked eggs in half to form the omelet.
Transfer to a plate and serve with fresh chives.
Storage & Leftovers
Like most egg dishes, this is best enjoyed freshly cooked, but you can store leftovers in an airtight container in the fridge for two days.
