  • Warm a medium non-stick skillet to low heat. Add cooking spray.
  • Whisk together the eggs, cottage cheese, and salt and pepper.
  • Pour the egg mixture into the pan. Carefully pull the omelets cooked part to the center, until enough of the egg has cooked to form the omelet.
  • Carefully flip the omelet and cook on the other side.
  • Add the shredded cheese to the center and flip the cooked eggs in half to form the omelet.
  • Transfer to a plate and serve with fresh chives.

Notes

Storage & Leftovers

Like most egg dishes, this is best enjoyed freshly cooked, but you can store leftovers in an airtight container in the fridge for two days.
 

Freezing

I would not freeze this because they will thaw out watery and hard.
