Cottage Cheese Queso

This Cottage Cheese Queso Dip is crazy simple with only 4 ingredients, 5 minutes, and warmed in the microwave, making it a great snack or appetizer.  Made with blended cottage cheese this queso dip is healthy, high in protein, low calorie, and tastes amazing. With Mexican flavors, it's great for dipping with tortilla chips or veggies.

  • Add the cottage cheese, cheddar cheese, a can of green chilis, and taco seasoning to a high-speed blender or food processor.

  • Blend until the cottage cheese queso is smooth.  You might need to use a spatula to scrape down the sides of the queso. Add any additional salt or pepper needed to taste.

  • To warm up, put it in a microwave-safe bowl and microwave the queso in 15-second increments until warm, stirring between. The cottage cheese can separate if you warm it up too quickly or too much. 

Notes

Storage & Leftovers
This dip is best enjoyed fresh because the texture can change sitting in the fridge.  You can safely keep it in the fridge for up to three days, but it will need a good stir before you eat it.
 
Freezing
I do not recommend freezing this creamy cottage cheese queso recipe because the texture will get strange.
