  • 1 1/2 cups mashed sweet potato
  • 2 eggs
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 cup honey can sub maple syrup
  • 1/2 cup apple sauce
  • 2 tablespoons butter can sub coconut oil
  • 1 1/2 cups white whole wheat flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini dark chocolate chips plus extra for topping!

  1. Preheat the oven to 350 degrees. Spray 12 muffins tins with cooking spray.

  2. In a large bowl mix the sweet potato, eggs, apple sauce, honey, almond milk, butter, and vanilla extract.

  3. Add the flour, cinnamon, baking soda, and salt. Mix until well combined.

  4. Fold in the chocolate chips.

  5. Divide batter into the muffins tins and top with a few extra chocolate chips.

  6. Bake for 20-25 minutes or until a toothpick comes out clean!

Recipe Notes

I make my mashed sweet potato by cooking two potatoes in the microwave.  Wash the spud, peirce it and microwave for 5-10 minutes until tender all the way through.  Scoop out the insides and mash.
