Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 teaspoon avocado oil or olive oil
  • 1/4 teaspoon garlic powder
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 1 lime
  • 1 handful fresh cilantro
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees.

  2. Toss the shrimp in the avocado oil and garlic powder. Season with salt and pepper.

  3. Put the shrimp on a cookie sheet in a single layer. Cook in the oven for 3-6 minutes just until the shrimp turn pink and start to curl. Allow the shrimp to cool.

  4. Toss the shrimp with the tomato. Squeeze the lime on top and add the chopped cilantro. Salt and pepper again.

  5. When you are ready to serve the dish carefully fold in the avocado.

  6. Serve room temperature or chilled.
