Cheesy Broccoli and Quinoa Casserole with Kale

Healthy food meets comfort food in my Cheesy Broccoli Quinoa Casserole with kale!

Ingredients

  • 1 cup uncooked quinoa
  • 2 1/2 cups vegetable broth divided
  • 12 ounce bag broccoli florets about a 1 1/2 cups
  • 1 tablespoon olive oil
  • 1 small sweet onion diced
  • 1/2 teaspoon salt divided
  • 1/2 teaspoon pepper divided
  • 2 teaspoons minced garlic
  • 2 packed cups chopped kale
  • 2 eggs beaten
  • 1 cup milk
  • 1 teaspoon dried mustard
  • 2 cups cheddar cheese divided

Instructions

  1. Cook quinoa in 2 cups of vegetable broth according to package instructions subbing the broth for water.
  2. Preheat oven to 350 degrees
  3. Coat a 9x9 baking dish with cooking spray.
  4. Steam broccoli in microwave for 2 minutes.
  5. Saute the onion in the olive oil over medium heat until soft and starting to brown. Season with a pinch of the salt and pepper.
  6. Add the garlic and saute for 30 seconds until fragrant.
  7. Add the kale and last 1/2 cup of broth. Add another pinch of salt and pepper.
  8. Allow the kale to cook down for about 3 minutes.
  9. Add the broccoli and another pinch of salt and pepper.
  10. In a bowl combine the eggs and milk. Beat well.
  11. Fold in 1 1/2 cups of the cheese.
  12. Slowly add the vegetable mixture to the egg mixture. Don't add it all at once or the heat could cook the eggs early.
  13. Put in a baking dish and top with the last 1/2 cup of cheese.
  14. Bake for 35-40 minutes or until a knife comes out clean.
  15. Optional: Turn on broiler to brown the cheese.
