Kale and Wheat Berry Salad

Ingredients

  • 1 cup cooked and cooled wheat berries
  • 4 cups curly kale thinly sliced
  • 1/4 red onion thinly sliced
  • 1/2 cup cranberries
  • Dressing:
  • 1 lemon juiced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Whisk the dressing together.
  2. Massage it into the kale.
  3. Toss with the wheat berries, onion and cranberries.
