Chunky Monkey Peanut Butter Baked Oatmeal

My Peanut Butter Chunky Monkey Baked Oatmeal recipe is a healthy breakfast inspired by the famous ice cream flavor.  With hearty oatmeal, peanut butter, banana, and a touch of chocolate chips this irresistible meal will have everyone asking for seconds.

  • Preheat the oven to 375 degrees. Spray an 8x8 pan with cookign spray.
  • Mix your oatmeal, baking powder and cinnamon together in a bowl.
  • Add the banana, peanut butter, milk, eggs, and vanilla extract to the same bowl. Stir.
  • Pour into the baking dish.
  • Bake for 25-35 minutes or until toothpick comes out mostly clean. Do not overbake.

Notes

Microwave peanut butter for 20-30 seconds to loosen it up enough to stir into the oatmeal batter and to drizzle on top.
I tested with unsweetened vanilla almond milk.
This Chunky Monkey Peanut Butter Baked Oatmeal can be stored in the fridge for up to five days.  It can also be frozen for up to three months.
