For the Salad:

baby kale

strawberries

sliced
½
cup
sliced red onions

about ¼ of a small onion

salted marcona almonds

can sub regular almonds

crumbled goat cheese
For the Dressing:

tablespoons
olive oil
1
tablespoon
red wine vinegar
1
tablespoon
honey
½
small lemon
,
juiced
salt and pepper
,
to taste
Instructions
Carefully mix the kale, strawberries, onion and almonds together in a large bowl.
Whisk together the ingredients for the dressing, the olive oil, red wine vinegar, lemon and honey.
Fold the dressing over the salad.
Plate the salad and add the goat cheese on top.
Notes
Storage & Leftovers
Any undressed salad can be stored in the fridge for up to two days. This salad is best served freshly made. It will not freeze.
