The Kale Strawberry Salad with goat cheese is the ultimate salad for spring and summer.  This simple salad features simple ingredients like baby kale, strawberries, goat cheese, Marcona almonds, and simple red wine vinegar dressing.

Ingredients
  

For the Salad:

  • 4 cups baby kale
  • 1 cup strawberries, sliced
  • ½ cup sliced red onions, about ¼ of a small onion
  • ¼ cup salted marcona almonds, can sub regular almonds
  • ¼ crumbled goat cheese

For the Dressing:

Instructions
 

  • Carefully mix the kale, strawberries, onion and almonds together in a large bowl.
  • Whisk together the ingredients for the dressing, the olive oil, red wine vinegar, lemon and honey.
  • Fold the dressing over the salad.
  • Plate the salad and add the goat cheese on top.

Notes

Storage & Leftovers

Any undressed salad can be stored in the fridge for up to two days.  This salad is best served freshly made.  It will not freeze.
