Roasted Sweet Potato Slices

Roasted Sweet Potato Slices are a fresh and delicious way to eat your sweet potatoes.

  • 2 medium sweet potatoes
  • 2 teaspoons olive oil
  • 1/2 teaspoon thyme
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Cooking Spray


  1. Preheat oven the 450 degrees.
  2. Spray a cooking sheet with cooking spray.
  3. Scrub the sweet potatoes well.
  4. Cut into half inch slices. You should have about 12 slices between the two potatoes, depending on the size you bought.
  5. Spread the slices out on a cookies sheet and brush both sides with the olive oil.
  6. Sprinkle the thyme, nutmeg, salt and pepper evenly across both sides of the slices.
  7. Bake for 20-25 minutes or until brown.

Recipe Notes

Choose sweet potatoes that are uniform in size for the best slices. If you end up with more or less than 12 slices, adjust the seasonings accordingly.
