Ingredients

  • 1 ripe avocado
  • 1 tablespoon red onion, finely chopped
  • 1 Roma or Plum tomato, seeded and diced
  • ½ teaspoon jalopeno, finely diced
  • ½ lime, juiced
  • 1 tablespoon cilantro, chopped
  • salt to taste

Instructions

  • Cut the avocado in half and squeeze out the green avocado. Lightly mash the avocado with a fork.
  • Add the red onion, tomato, jalapeno, lime and cilantro to the bowl and carefully mix leaving some avocado chunks.
  • Serve immediately with chips or on top of a Mexican dish.

Notes

I love lime so I'll usually add the entire lime to my guacamole so it doesn't go to waste.
Guacamole doesn't store well and will turn brown so this is best enjoyed immediately.
If you have to store it keep it in an airtight container in the fridge with a piece of plastic wrap pushed up next to guacamole to keep any air from touching it.
