Ingredients

  • 3 pounds red potatoes sliced in 1/4 thick half moons
  • 2 tablespoons olive oil
  • 1 small lemon juiced
  • 2 tablespoons fresh Rosemary- chopped or 2 teaspoons dried rosemary
  • 1 teaspoons minced garlic
  • 1/4- 1/2 teaspoon salt adjust to taste
  • 1/4- 1/2 teaspoon pepper adjust to taste
  • optional garnish: fresh parsley

Instructions

  1. Toss all the ingredients in the Crock Pot and stir well. Start with 1/4 teaspoon of salt and adjust to taste.
  2. Cook on low for 5-6 hours or high for 2-3 hours. Stir occasionally.
