Ingredients
  

  • 3 pounds red potatoes, sliced in ¼ thick half moons
  • 2 tablespoons olive oil
  • 1 small lemon, juiced
  • 2 tablespoons fresh Rosemary- chopped, or 2 teaspoons dried rosemary
  • 2 teaspoons minced garlic
  • ¼- ½ teaspoon salt, adjust to taste
  • ¼- ½ teaspoon pepper, adjust to taste
  • optional garnish: fresh parsley

Instructions
 

  • Toss all the ingredients in the Crock Pot and stir well. Start with ¼ teaspoon of salt and adjust to taste.
  • Cook on low for 5-6 hours or high for 2-3 hours. Stir occasionally.
