Apple Cinnamon Baked Oatmeal

  • 3 cups old-fashioned oatmeal
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 eggs beaten
  • 2 cups vanilla almond milk Can sub any type of milk
  • 1/2 cup apple sauce
  • 1 teaspoon vanilla extract
  • 1 medium apple chopped


  1. Preheat oven to 350 and grease an 8x8 inch baking pan.
  2. Combine the oatmeal, brown sugar, baking powder, cinnamon, nutmeg and salt in one bowl.
  3. Mix the eggs, milk, apple sauce and vanilla extract in a second bowl.
  4. Slowly pour the wet ingredients over the dry ingredients.
  5. Allow mixture to sit for 5 minutes.
  6. Fold in the apples.
  7. Pour in the casserole dish.
  8. Bake for 25-30 minutes.

Serving options: Eat by itself, top with additional fruit and nuts, top with additional milk.
