Honey Glazed Crock Pot Carrots

Ingredients
  

  • 2 pounds baby carrots
  • 2 tablespoons coconut oil or ¼ cup butter, melted
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt or to taste
  • ¼ cup honey

Instructions
 

  • Put the carrots, coconut oil, cinnamon, nutmeg, vanilla extract and salt in large Crock Pot. Stir well.
  • Cook on low 6-8 hours or high 3-4 hours until the carrots are tender, stiring once. Turn the Crock Pot to warm.
  • Just before serving stir in the honey.

Notes

Storage & Leftovers
Store any leftovers of the glazed carrots in the crock pot in an airtight container for up to 5 days.  Reheat leftovers in the microwave or warm them back up in a skillet.
 
Freezing
You can freeze leftover carrots in a freezer-safe container for up to 3 months.
