Chunky Monkey No Bake Energy Bites

Healthy no bake energy bites inspired by the famous ice cream!

  • 1 Banana over ripe
  • 1 cup Dates
  • 1 teaspoon Vanilla
  • 1 cup Old Fashioned Oats divided
  • 1 tablespoon Chia Seeds
  • 1/4 cup Almonds or Peanuts chopped
  • 1/4 cup Mini Chocolate Chips


  1. Cover the dates in water and soak for 15-30 minutes. Drain the water.

    In a food processor blend the banana, soaked dates, vanilla and 3/4 cup of the old fashioned oats until smooth.  After blending fold in last 1/4 cup of oats, chia seeds, chopped nuts and mini chocolate chips into the mixture.

    Use your hands to form bite sized balls.  Place on a cookie sheet in the fridge and allow them to firm up before moving to a storage container.
