Blackened Shrimp Tacos with Mango Salsa

Blackened Shrimp Tacos with Mango Salsa are a simple, healthy, and delicious meal.  Sweet shrimp are blackened, oven-baked, and stuffed in warm tortillas.  The simple pescatarian dinner is then topped with my Mango Salsa and Greek Yogurt Chipolte Sauce drizzle.  This surprisingly tasty meal can be on your table in less than 20 minutes!

Ingredients
  

For the Blackened Shrimp:

For the Mango Salsa:

For the Greek Yogurt Chipolte Lime Sauce:

  • ½ cup Greek yogurt
  • ½ lime juiced
  • ½ teaspoon adobo sauce from chipotles peppers in adobe sauce

Extras:

  • 8 tortillas
  • Extras: Lime Wedges, Cheese, Cilantro

Instructions
 

For the Blackened Shrimp:

  • Preheat the oven to 425 degrees.
  • Spray a baking sheet with cooking spray.  For easy clean up line it with foil and then spray it.
  • Toss your shrimp in the Blackening Seasoning and olive oil in a medium bowl.
  • Put the shrimp on the baking sheet in a single layer.
  • Cook for 3-5 minutes. The shrimp are done when they turn pink and just start to curl.

For the Mango Salsa:

  • Follow the instructions in the linked recipe below to peel the mango and mix all the ingredients together.

For the Greek Yogurt Chipolte Sauce:

  • In a small mixing bowl, measure out your Greek yogurt.
  • Spoon out the chipotle sauce by pushing the peppers to the side of the jar.  Start with less and add more to tastes, as it can be spicy.
  • Add a touch of lime.
  • You can either just spoon on the sauce or put it in a zip lock bag and cut a small hole in the corner to create the pretty line.

To Assemble the Shrimp Tacos:

  • Warm up your tortilla either on the stove or microwave.
  • Fill with the taco shells with the blackened shrimp. Squeeze some lime juice on top.
  • Spoon the Mango Salsa on top.
  • Drizzle the Greek Yogurt Chipotle Sauce.
  • Serve immediately.

Store any leftovers unassembled in separate airtight containers in the refrigerator for three days.
