Watermelon Arugula Salad is a light, refreshing and vibrant summer salad made with fresh peppery arugula, sweet watermelon cubes, salty feta cheese, and crunchy pecans. This unexpected side dish is perfect for any summer dinner, potluck or party.
In a large bowl combine the arugula and mint. Drizzle a small amount of olive oil and red wine vinegar on the greens. Add a small amount of sea salt and fresh ground pepper. Lightly toss the greens.
If serving on plates, divide the greens among 6 plates. Add the watermelon, feta, and pecans on top. Garnish with a sprig of fresh mint.
If serving in a large bowl, toss most of the watermelon, feta, and pecans into the salad. Leave a small amount to arrange on the top of the bowl for a pretty presentation. Garnish with fresh mint.
Serve immediately because the greens will get soggy after being dressed.
