My Healthy Lemon Poppy Seed Muffins are light, fluffy, and delicious PLUS easy to make.  This healthy muffin recipe uses some swaps like coconut oil, honey, and greek yogurt for an irresistible texture and flavor everyone will love.

  • Preheat the oven to 350 degrees. Spray your muffin tins with cooking spray.
  • In a medium bowl, mix together your dry ingredients: flour, baking soda, baking powder and salt.
  • In a second bowl, mix together your wet ingredients the melted coconut oil, honey eggs, plain Greek yogurt vanilla extract, lemon extract and, lemon juice.
  • Fold in the wet ingredients until well combined and then add the lemon zest and the poppy seeds. Do not overmix.
  • Fill the muffin tins about ¾ full.
  • Bake for 15-17 minutes or until a toothpick comes out clean.

Notes

These Healthy Lemon Poppy Seed Muffins can be stored in an airtight container on the counter for three days or in the fridge for up to 5.  They can also be frozen for up to three months.
