Using a mesh sieve, rinse the rice until the water runs clear.
In a pot on the stovetop combine the water, coconut milk, rice and salt. Stir together. Bring to a boil.
Once the pot reaches a boil, cover the pot and reduce the heat to simmer.
Allow to cook until the liquid absorbs. It should be about 20 minutes. Stir occasionally to keep it from sticking to the bottom of the pot.
Once it's done cooking add the lime to taste. Garnish with lime slices and fresh cilantro.
Rice Cooker Method:

Put the water, coconut milk, rice and salt in a rice cooker and select "white rice."
When the cycle is finished, fluff the rice and add any lime to tase. Garnish with lime slices and fresh cilantro.
Notes
Make sure to shake the can of coconut milk well before you open it.This can be made with light or full fat coconut milk depending on your dietary preferences. I calculated the calories for light coconut milk.For even more coconut flavor stir in a few tablespoons of shredded coconut.
