  • 2 cups cucumber (3 mini or 1 large), sliced
  • 2 cups cooked quinoa
  • ½ cup red onion, diced
  • ½ cup crumbled feta
  • ½ cup fresh herbs - basil, oregano, chives, whatever is fresh
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • ½ lemon, juiced
  • salt & pepper to taste
  • 1 avocado, diced


  • Mix all the ingredients except the avocado in a bowl until well combined.  Fold in the avocado at the end just before serving.  


Serve this salad chilled and cut the avocado just before serving.
