Healthy Apple Pie Greek Yogurt Pancakes are the perfect protein packed way to start your day.

Ingredients
  

  • 1 egg
  • ½ cup vanilla greek yogurt
  • ½ cup milk, I tested with 2%
  • 2 teaspoons vanilla extract
  • 1 cup all purpose flour
  • 1 ½ teaspoon baking powder
  • ¼ cup coconut sugar
  • 3 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • teaspoon salt
  • 1 cup grated apple
  • cooking spray

Instructions
 

  • Mix the egg, yogurt, milk and vanilla in bowl.
  • Add the dry ingredients and in the same bowl and mix together until well combined. Fold in the grated apple.
  • Heat a non-stick skillet to medium low. Spray cooking spray on it.
  • Pour about a quarter cup of the batter for each pancake. Allow to cook 2-3 minutes or until bubbles start appearing in the middle.
  • Flip and allow to finish cooking on the other side.
  • Serve with your favorite syrup, walnuts and apple slices.

Notes

You can make some even healthier swaps with this recipe, although I tested it and as written tastes the most like apple pie.
You can sub 2 tablespoons of honey for the coconut sugar and use whole wheat flour.
