Roasted Lemon Parmesan Broccoli
Healthy addictive bites of broccoli!
- 12 ounces bag of broccoli florets, 2-3 cups of raw florets
- 1 small lemon, juiced
- ¼ cup grated parmesan cheese, divided
- 1 tablespoons olive oil
- ¼ teaspoon salt, or to taste
- ¼ teaspoon pepper, or to taste
- Cooking spray
Preheat the oven to 425 degrees & spray foil lined baking sheet with cooking spray.
Break up any really large broccoli pieces so they are all about the same size.
Toss broccoli in lemon, half the parmesan, olive oil and salt & pepper. Evenly lay on baking sheet.
Roast in oven for 12-15 minutes or until desired tenderness. I like them a bit crunchier.
Top with the rest of the parmesan and serve immediately.
