Roasted Lemon Parmesan Broccoli

  • 12 ounces bag of broccoli florets, 2-3 cups of raw florets
  • 1 small lemon, juiced
  • ¼ cup grated parmesan cheese, divided
  • 1 tablespoons olive oil
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon pepper, or to taste
  • Cooking spray


  • Preheat the oven to 425 degrees & spray foil lined baking sheet with cooking spray.
  • Break up any really large broccoli pieces so they are all about the same size.
  • Toss broccoli in lemon, half the parmesan, olive oil and salt & pepper. Evenly lay on baking sheet.
  • Roast in oven for 12-15 minutes or until desired tenderness. I like them a bit crunchier.
  • Top with the rest of the parmesan and serve immediately.
