  • ½ cup SimplyNature Organic Quinoa
  • 1 cup water
  • 1 cup cherry tomatoes, halved
  • 1 8 ounce package Priano Fresh Mozzarella in Marinade, removed from the oil
  • ½ cup Dakota's Pride Great Northern Beans, rinsed and drained
  • ¼ cup Fit & Active Light Balsamic Vinaigrette
  • ½ lemon, juiced
  • ¼ teaspoon Stonemill iodized salt
  • ¼ teaspoon Stonemill ground pepper.
  • optional garnish: fresh basil


  • Cook the quinoa in salted water according to package instructions.
  • Allow quinoa to cool to at least room temperature.
  • Mix all ingredients together.
  • Salt and pepper to taste.
